How to Make Fresh Cream With Milk?

The cream ... A treat for everyone and for all dishes. It is the basic ingredient of whipped cream that is used for everything (pancakes, ice cream, pie ...). So today, we invite you to discover how to make fresh cream with milk.

Industrial preparation of fresh cream
The cream that you find in supermarkets comes from an industrial process of separating the cream found in natural milk. Skimming is the natural process that allows the cream to rise to the surface of the milk forming a layer. Then it will be pasteurized, will have to undergo a ripening phase (to thicken) and will eventually be packaged to be sold.

Know that if you plan to make fresh cream with the milk of big surface, this will be impossible for you even with a whole milk. So if you do not have a milk producer near you, you have to go without. We offer here 2 tips to replace the cream depending on the use you intend to make (sweet / salty).

Recipe 1: with farm milk
Ingredient / Material Needed:
Unpasteurized, whole or farm milk (which you can buy from a dairy farmer).
A fridge.

To make fresh cream with milk :
1. Pour the milk into a salad bowl.
2. Put the salad bowl in your refrigerator.
3. Let it rest.
4. A layer of cream will eventually form.
5. Get it back!

Recipe 2: with whipped cream
For this preparation, you will need powdered gelatin. Know that you can also replace it with gelatin sheets, you just need to adjust the quantities. You can also use agar if you do not have gelatin.

1.Dilute the gelatin. Mix one tablespoon of powdered gelatin in 1/4 cup of water. Let the mixture sit until the gelatin absorbs all the water.
2.Heat the milk. Put ½ cup of milk to heat over medium heat. Stir it constantly so that it does not burn. As soon as small bubbles form at the edges and the milk starts to foam, remove the pan from the heat.
3.Mix the gelatin and the milk. Pour your hot milk into a Xiaomi bowl. Add the water + gelatin mixture. Be sure to beat the mixture with a whisk so that the gelatin dissolves well in the milk. Otherwise, you will get a salad bowl of milk with small pieces of gelatin.
4.Add sugar and vanilla. Add these ingredients to the milk + gelatin mixture. Keep whipping the mixture.
5.Let cool. Put your mixture in the fridge for about 90 minutes. Be sure to mix your preparation every 10 minutes.
6.Cool the mixture in a bowl of ice water. Take a larger container, half fill with water and add ice cubes. Remove the salad bowl from the refrigerator and immerse the 30 minutes in the ice water container.
7.Whip the cream. Assemble the cream using an electric mixer. Once it has thickened, you can keep it in the refrigerator with stretch film.

Advice
For whipped cream, if you do not have gelatin, you can also use sweetened condensed milk.
If you want whipped cream instead of whipped cream, you can put it in a siphon if you have one.
